Asparagus Salad

A great salad for those looking for a different type of salad.

Ingredients

  • 1 cup Water
  • 3/4 cup Couscous, uncooked
  • 1 bunch Fresh asparagus - 2
  • 1/2 cup Green or Red Peppers, chopped
  • 1/2 cup Cheery Tomatoes, halved
  • 1/4 cup Feta cheese
  • Dressing
  • 2 tbsp Extra virgin olive oil
  • 1 1/2 tbsp Lemon Juice
  • 1 tsp Dried Oregano
  • 1/4 tsp Salt

Directions

  • 1. In suacepan, bring water to a boil & stir in couscous
  • 2. Remove from heat and let stand for 5 min.
  • 3. Fluff and let cool for 10 min.
  • 4. Blanch the asparagus in a large pot of boiling water until bright green (2-5 min)
  • 5. Remove with slotted spoon and place in a large bowl of ice water.
  • 6. Remove from water and dry.
  • 7. In a small bowl, whisk dressing ingredients.
  • 8. In a large bowl, combine all ingredients and mix well.
  • 9. Cover and refrigerate.
