A great salad for those looking for a different type of salad.
Ingredients
- 1 cup Water
- 3/4 cup Couscous, uncooked
- 1 bunch Fresh asparagus - 2
- 1/2 cup Green or Red Peppers, chopped
- 1/2 cup Cheery Tomatoes, halved
- 1/4 cup Feta cheese
- Dressing
- 2 tbsp Extra virgin olive oil
- 1 1/2 tbsp Lemon Juice
- 1 tsp Dried Oregano
- 1/4 tsp Salt
Directions
- 1. In suacepan, bring water to a boil & stir in couscous
- 2. Remove from heat and let stand for 5 min.
- 3. Fluff and let cool for 10 min.
- 4. Blanch the asparagus in a large pot of boiling water until bright green (2-5 min)
- 5. Remove with slotted spoon and place in a large bowl of ice water.
- 6. Remove from water and dry.
- 7. In a small bowl, whisk dressing ingredients.
- 8. In a large bowl, combine all ingredients and mix well.
- 9. Cover and refrigerate.
